Girls Night Treats

It’s a new year and things are finally settling down, which means it’s time for me to call up my girlfriends for a girls night! What’s essential for every girls night?! A charcuterie spread, of course! We planned to watch Disney’s Live Action Aladdin and went with a Middle Eastern/South Asian inspired spread. All you need is some savory & sweet bites, fruit, cheese and of course crackers! We love using Triscuit, Wheat Thin & recent our fave GOOD THiNS! The best part of using these crackers is that they are so versatile and have so many easy recipes to create using them!

With Triscuits I made a Whipped Ricotta Spread with Grapes! Start by taking some ricotta and whipping it up to make it nice and fluffy. Spread on a plate, then sprinkle salt and pepper to taste, a drizzle of olive oil and top with some sliced grapes. Spread on top of your Triscuit and enjoy! This easy spread is a total crowd pleaser!

We needed something sweet for our board, so we made the easiest treat using Wheat Thins! Start by melting white chocolate (following manufacturer’s instruction), then dip the Wheat Thin and lay on parchment paper. While the chocolate is still wet sprinkle with your favorite toppings. We used crushed pistachio nuts and some orange zest to stay on theme with our movie.

Finally, we wanted to add something savory but filling. We recreated our version of a South Asian street food called Chaat Masala. This simple recipe requires chopping boiled potatoes, 1 can of drained chickpeas, ½ a chopped red onion, 1 chopped tomato, and a green chili. Squeeze ½ a lemon on top of your mixture with 1 Tsp of Cumin, ½ Tsp Paprika and Salt and Pepper to taste. Mix all your ingredients together. Garnish with Cilantro and serve with a generous portion of crushed GOOD THiNS! This chaat is so addictive! You’ll find yourself making frequently!

Be sure to also check out Chef Levi’s simple Triscuit recipes that are sure to be crowd pleasers! We added some thinly sliced green apples, with a slice of cheddar, and sprinkled with some cinnamon sugar. Everyone loved the combo!
